Okroshka on Kefir, with Mineral Water

Okroshka on kefir with mineral sparkling water is a very tasty cold soup that helps out perfectly in the summer heat.

Ingredients

  • Potatoes – 300 g
  • Radish – 300 g
  • Cucumbers – 300 g
  • Eggs – 5 pcs.
  • Parsley greens – 1 bunch
  • Dill greens – 1 bunch
  • Green onions – 1 bunch
  • Chicken breast – 1 pc.
  • Kefir – 1 l
  • Sour cream – 0.2 l
  • Mineral water – 1.5 l
  • Mustard – 1 teaspoon
  • Salt to taste

How to cook okroshka on kefir with sparkling water:

Directions

  1. Place potatoes, radishes, cucumbers, egg whites, meat, dill, and parsley in a deep container.
  2. Combine the yolks with mustard and mash with a fork.
  3. Salt green onions and grind with a crush.
  4. Add yolks and green onions to the rest of the ingredients.
  5. Pour in kefir.
  6. Fill with mineral sparkling water.
  7. Then add sour cream.
  8. Stir and season with salt to taste. (Optionally, you can add balsamic or apple cider vinegar to okroshka on kefir.)
  9. Okroshka on kefir, with sparkling water, is ready.
