Pumpkin Croquettes with Carrots and Cheese (in the Oven)

Even those who don’t like pumpkin will surely enjoy this dish. Pumpkin croquettes with carrots and cheese, baked in the oven, turn out to be very tasty and tender, with an appetizing crust and melted cheese filling. By the way, making such croquettes is not difficult at all!

Ingredients

  • Pumpkin – 400 g (peeled – 330 g)
  • Onions – 85 g
  • Hard cheese – 65 g
  • Carrots – 60 g
  • Bread crumbs – 20-30 g
  • Dried parsley – 1 teaspoon
  • Vegetable oil – 1 teaspoon
  • Salt to taste

Directions

  1. We prepare the necessary products.
  2. Peel and cut the pumpkin into small pieces 0.5-1 cm thick. Put the pumpkin in a microwave oven.
  3. Cover the dishes with a lid and put them in the microwave for 5-7 minutes at 800 watts. The pumpkin should be soft.
  4. Knead the pumpkin with mashed potatoes.
  5. If there is a lot of juice in the finished pumpkin, put the pumpkin on a sieve and squeeze out the excess liquid.
  6. Peel the carrots and onions. Rub the carrots on a medium grater, onions on a coarse grater. Squeeze the chopped onion from excess liquid.
  7. Combine boiled pumpkin, chopped onion and carrots in a bowl. Add salt.
  8. Mix everything well.
  9. Rub the cheese on a coarse grater.
  10. We turn on the oven to heat it up to 180 degrees. Divide the pumpkin mass into 5 equal parts. We form a cake from each part. It is most convenient to form a cake in the palm of your hand.
  11. We also divide the cheese into 5 parts. Put some of the cheese in the middle of the pumpkin pie.
  12. We wrap the cheese in a flat cake and form a spherical croqueta. So we form croquettes from the remaining pumpkin mass and cheese – a total of 5 pieces are obtained.
  13. Combine bread crumbs and dried parsley in a bowl.
  14. Roll the croquettes into the mixture.
  15. Cover the form or baking sheet with parchment. Lubricate the parchment with vegetable oil and layout the croquettes.
  16. We bake pumpkin croquettes in an oven preheated to 180 degrees for about 25 minutes.
  17. Put the finished pumpkin croquettes with cheese on a plate and serve.
