Ingredients

  • 1 egg yolk
  • 1 teaspoon mustard
  • 1 pinch (s) sugar
  • 125 ml olive oil
  • 3 tablespoon lemon juice
  • 50 g yourt (whole milk)
  • salt and pepper
  • 2 egg (s)
  • 3 spring onion (s)
  • 0.5 ½ apple
  • some chives
  • 0.5 ½ bunch parsley
  • 8 basil leaves
  • some cayenne pepper

Instructions

  1. Mix the egg yolks, mustard and sugar together. Gradually stir in the oil to make a mayonnaise. Stir in lemon juice and yogurt and season with salt and pepper.
  2. Boil the eggs hard, peel them and add them cut into small pieces. Clean and finely chop the spring onions and apple, add to the mayonnaise with the chopped herbs, stir and season with cayenne pepper.
  3. Tastes particularly good with fish and potatoes.
