Rice Casserole with Minced Meat, Mushrooms and Cream

The casserole is a versatile dish for the whole family. It can be prepared from a wide variety of foods. A delicious and simple recipe for a casserole with rice, mushrooms, and minced turkey is offered. Cream and chicken eggs are used for pouring, thanks to them the dish acquires a delicate taste and juiciness, and the traditional cheese crust will become the final “chord” of this gastronomic composition.

Ingredients

  • Champignons – 200 g
  • Rice – 150 g
  • Minced turkey – 300 g
  • Bulb onions – 1 pc. (70 g)
  • Chicken egg – 2 pcs.
  • Cream (15% fat) – 200 ml
  • Hard cheese – 50 g
  • Butter – 30 g
  • Vegetable oil – 2 tbsp
  • Curry Spice Blend – 1 teaspoon
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Prepare all items for the casserole. Any mince can be used – pork, beef, mixed. Instead of champignons, you can take forest mushrooms, but in this case, the mushrooms must be boiled before cooking. Peel and rinse the onion.
  2. Rinse the rice several times until the water becomes clear. Then pour 300 ml of drinking water into the groats, salt, boil and cook for 15-20 minutes until the rice is cooked.
  3. When the water is absorbed into the rice, add the curry spice to the porridge. Stir.
  4. Wash the mushrooms, peel if necessary. Cut the mushrooms into pieces and fry in 1 tablespoon. a spoonful of vegetable oil.
  5. The mushrooms have shrunk in size and turned golden brown, the liquid has evaporated – the mushrooms are ready. Preheat oven to 200 degrees.
  6. In a skillet, heat the butter (30 g) and 1 tablespoon. a spoonful of vegetable oil. Cut the onion into small cubes. Add finely diced onions. Fry the onions for 5-7 minutes until golden brown.
  7. Add minced meat to the onion in the pan and fry for another 8-10 minutes, breaking the lumps with a silicone spatula.
  8. Minced meat is ready if it has become gray-brown, soft, and juicy. Salt the minced meat a little, add black pepper if desired.
  9. For pouring, combine the cream and chicken eggs, add a little salt.
  10. Grate the cheese on a fine grater. Add half of the cheese to the fill and leave half for the top layer.
  11. In a baking dish in the first, bottom layer, place half of the rice and smooth with a spatula. Top with minced meat with onions and flatten.
  12. Put the fried mushrooms on the minced meat. Cover the mushrooms with the remaining rice (the other half) and smooth the surface with a spatula.
  13. Pour the mixture of cheese, eggs, and cream over the casserole and top with the chopped cheese.
  14. Cook the casserole in the oven at 200 degrees for 15-20 minutes, until the cheese, is light brown.
  15. Rice casserole with minced meat, mushrooms, and cream is ready. Cool it for 15 minutes to a warm state to maintain its shape when cut.
  16. Serve the casserole with fresh or salted (pickled) vegetables. The combination of juicy mushrooms, crumbly rice, and hearty minced meat is a great lunch or dinner for the whole family!
