  2. Put the dough in a plastic bag, but for now, prepare the filling for the pies.
  3. In Indian cuisine, spices are added to heated oil to make the dish more flavorful. Add spices (coriander, cumin, sweet paprika, red hot pepper) to the vegetable oil in a frying pan. Adjust the pungency of the filling to your taste with the amount of hot pepper.
  4. Add the ginger root, cut into small cubes, and fry for literally 10-15 seconds.
  5. Add the onion, cut into small cubes, and fry until light brown.
  6. Add fresh green peas (you can use frozen ones) and fry for a couple of minutes over low heat.
  7. In the end, combined with potatoes, previously boiled in salted water. Cut potatoes into pieces should be kneaded in a convenient way for you, but not in mashed potatoes, but so that small pieces remain.
  8. We form a flagellum from the dough.
  9. We cut the flagellum into 16 equal parts, about 47 g each. Round each piece of dough, turning the edges down. Fold on a floured surface and cover with a towel or cling film.
  10. We roll out a cake of about 17 cm in size. On half of the cake, we make cuts at a distance of about 1 cm from each other, not reaching the edge also by 1 cm.
  11. Lightly grease one half of the cake with water and fold the cake in half. The water will act as glue.
  12. Raise one edge of the folded cake and grease it with water on the notched side. Raise the opposite edge and blind the edges along the fold of the cake, forming a bag.
  13. We put 1-1.5 tablespoon inside. l. cooked filling and pinch the edges.
  14. Thus, we form all the triangular pies with potato filling and cover them with a towel.
  15. Fry Indian samsa on both sides in a large amount of well-heated vegetable oil, over medium heat, until golden brown. We spread it on a paper towel and invite everyone to drink tea!
In India, samsa is served hot, hot, hot, but cooled samsa is very tasty. The dough is crispy on top, soft inside, a lot of spicy filling – it’s very tasty!
  16. If you like the recipe, be sure to cook it! And I wish you bon appetit, a good day, and all the best to you!
