We spotted an interesting recipe for buns in the bakery, really liked the idea! We tried it, it turned out great! Sandwich buns “Pockets” for sandwiches with any filling. I will share with you a little kitchen trick!
Ingredients
For the test:
Flour – 320 g + for working with dough
Pressed yeast – 5 g
or dry yeast – 1 teaspoon
Egg – 1 pc.
Milk (warm) – 180 ml
Sugar – 1 tbsp
Salt – 1 pinch
Butter (soft) – 25 g
Vegetable oil – for working with dough
For filling:
Hard cheese (I have slices) – 100 g
Fried meat (or sausage) – 100-150 g
Lettuce – by the number of buns
Tomatoes – 2 pcs.
Purple onion – 1 pc.
Besides:
Yolk – 1 pc.
Milk – 1 tbsp
Sesame seeds – for sprinkling on buns
Directions
The dough is the most common. Before kneading the dough, make a quick dough to check the yeast activity. To do this, pour the flour into a larger cup, make a depression in the flour and pour in warm milk, add sugar, and crushed (or dry) yeast. Mix milk with sugar and yeast and let stand for 5-10 minutes.
Add salt and egg.
We knead the dough. We add soft butter last when the dough gathers into a lump.
Knead the dough for a few minutes. The dough is soft and slightly sticky to the hands, excellent. To make it easier to knead, grease your hands with vegetable oil.
Cover the finished dough with foil/lid and put it in a warm place for proofing, for 40-60 minutes. The dough is great.
Without strongly crushing, divide the dough into six equal parts and round. And let the dough balls “rest”, let them lie on the table under a film or towel for about 10 minutes.
The filling is the most sandwich today: lettuce, tomatoes, cheese, and fried meat. You can take your favorite filling, add cucumbers, replace meat with sausage.
We cut out small triangles from the baking paper and, if necessary, grease them with vegetable oil (I have siliconized paper).
Dust with flour, roll out each dough bun into a small cake. Fold the cake in half, then again in half. It turns out a triangle. We lay each fold-pocket with a paper triangle.
Let the buns rise (come up) under the film for 10 minutes. Preheat the oven to 180 degrees.
Before baking, grease the buns with yolk mixed with milk and sprinkle with sesame seeds.
We bake the “Pocket” sandwich buns in a preheated oven (temperature – 180 degrees) for 10-12 minutes.
We immediately remove the paper from the finished buns (it can be removed easily). Let the buns cool well. We fill each pocket of the buns with filling: we send one leaf of lettuce and one slice of cheese to the lower pocket, put two slices of tomato and three rings of onion into the next pocket, and the upper pocket is for meat/sausage. Such sandwich buns can be prepared in advance (and many), filled and taken with you on a picnic, on the road, for a snack.
