Ingredients
- 250 g spelled flour
- 250 g spelled flour (whole rain)
- 100 g crème fraîche
- 1 egg (s)
- 150 ml water, lukewarm
- 1 bag / s dry yeast
- 5 g salt
- 6 teaspoons sugar
- Fat, for the shape

- Mix yeast with water and sugar. Mix both flours and salt in a large bowl, form a well and add the yeast mixture, egg and crème fraiche.
- Then knead all ingredients into a firm dough. If necessary, add a little more water or flour.
- Let the dough rise in a warm place (e.g. heat the oven to 50 degrees and switch it off) for 1 1/2 hours.
- Then knead the dough again briefly, shape a loaf, place in a greased loaf pan and let rise for another 30 minutes.
- Before baking, brush the surface with water and then bake for 25-30 minutes at 200 degrees.
- Let the bread cool on a wire rack.
