Tartlets with Sprat and Cheese Pate

Dishes for a buffet table or snacks for a large company are always difficult and time-consuming and costly. But this recipe for tartlets stuffed with sprat and cheese is fast and easy to prepare. The only thing you need to take care of in advance is to buy or bake shortcrust tartlets.


  • Tartlets – 20-25 pcs.
  • Sprats – 1 can (160 g)
  • Hard cheese – 100 g
  • Ketchup – 1 tbsp
  • Wheat flour – 1 tbsp
  • Eggs – 3 pcs.
  • Salt – 1/3 teaspoon


  1. Prepare all the ingredients before making the sprat and cheese tartlets. You can take tartlets ready-made or bake yourself from shortcrust pastry. Turn on the oven to heat up to 180 degrees.
  2. Grate hard cheese on a fine grater.
  3. Remove the sprats from the jar, transfer to a flat plate and mash with a fork.
  4. Combine cheese and sprats. Add 1 tablespoon. a spoonful of oil from a jar of sprats so that the filling for the tartlets is more uniform.
  5. Combine egg yolks, salt, ketchup and flour in a deep bowl.
  6. In a separate deep bowl, using a mixer or whisk, beat the whites until firm peaks.
  7. Gently stir in the whites with the yolks and ketchup. It is better to do this not with a mixer, but with a spoon, mixing in from the bottom up.
  8. So, all the ingredients for the sprats tartlets are ready. Place empty tartlets on a baking sheet.
  9. Fill the tartlets with sprat and cheese pate.
  10. Spoon the egg mixture on top with a teaspoon.
  11. Bake tartlets with sprats and cheese in an oven heated to 180 degrees for 15 minutes.
  12. Festive tartlets with filling are ready. Serve the tartlets warm while the cheese is melted.
