Ingredients

For the dough:

  • 250 g flour (wheat flour), handy
  • 250 g flour (wheat flour), smooth
  • 5 egg (s)
  • salt

For the filling:

  • 150 g mountain cheese
  • 100 g potato (s), cooked and strained
  • 63 ml sour cream
  • parsley
  • nutmeg
  • salt and pepper
  • 1 egg (s), for brushing
  • Butter and parmesan

Instructions

  1. Process all the dough ingredients into a smooth dough and leave (wrapped in foil) to rest for half an hour. Cut the mountain cheese into small cubes and mix well with the other ingredients for the filling (mountain cheese to pepper).
  2. Roll out the pasta dough thinly and cut out circles approx. 5 cm in diameter. Place the cheese filling in the middle of the circles, brush the edges with egg and fold up. Press the edges with a fork. Let the dumplings soak in boiling salted water for three to four minutes. Then drain well and serve. When they climb up, they are done.
  3. Pour browned butter over it and sprinkle with parmesan. Salad is eaten with it. A coleslaw with bacon goes particularly well with it.
  4. Tip: If you make the circles a little bigger, you can turn the edges of the dumplings up like a braid, fold them in. It just looks nicer, otherwise it`s no use.
