I am sharing with you a recipe for the perfect tender buns with aromatic plum filling. Kefir buns remain soft for a long time and do not stale. Delight your family with fresh plum buns!

Ingredients
For the dough:
Kefir (warm) – 250 g
Butter – 80 g
Sugar – 70-80 g
Eggs – 2 pcs.
Flour – 520 g + for working with dough
Dry yeast – 7-8 g (about 2 teaspoon)
Vanilla sugar – 10 g
Salt – 1 pinch
Vegetable oil (for working with dough) – 1 teaspoon
For filling:
Plums (I have a Hungarian variety) – 6 pcs.
To grease buns:
Yolk – 1 pc.
Milk – 1 teaspoon
To sprinkle on buns:
Poppy – 2 tbsp
Directions
Combine eggs and sugar in a deep bowl.
Pour in warm kefir. We mix.
Melt the butter and cool. Add melted but not hot butter to a bowl and stir the ingredients.
Sift flour into a separate container and add dry yeast to it.
Add flour in parts to the liquid ingredients of the dough, thoroughly mixing each portion of flour.
Dust the working surface with flour and knead a soft, smooth, non-sticky dough.
Grease the bowl with vegetable oil and put the dough into a bowl, cover with cling film and put in a warm place for proofing for 40-50 minutes.
Wash the plums, cut them in half and take out the seeds. Then we cut each half of the plum into two parts.
As the time elapsed, the dough rose and increased in size.
Cut the dough into two equal parts.
Put one part of the dough back into the bowl, and roll the other out on a flour-dusted table into a round layer 0.5-0.7 cm thick.Cut the circle with a pizza knife or a sharp kitchen knife into 12 equal triangles.
On the base of each triangle, lay out a slice of plum, slightly retreating from the edge.
Cover the filling with the edge of the dough and fold the triangle to the end.
In the same way we form buns from the second part of the dough. We turn on the oven to heat up to 180 degrees. Cover the baking dish (baking sheet) with parchment paper and lay out the buns at a short distance from each other.
In a small container, combine the yolk with milk, mix. Lubricate the buns with yolk using a culinary brush.
Sprinkle the buns with poppy seeds, send them to the preheated oven and bake at 180 degrees for 20-25 minutes (be guided by the features of your oven).
Kefir rolls with plums are ready.
Transfer the browned buns to a wire rack to cool.
The buns are well baked, but not overdried, the filling does not spread.
The buns are moderately sweet, but if you like sweeter baked goods, you can sprinkle the buns with powdered sugar. These delicious pastries can be served with tea or with cold compote.
