Butter Buns “Chocobon” with Cheese-Cinnamon Glaze

One of the variations of the famous Cinnabon buns, which is especially popular among the sweet tooth, is the Chocobon buns. These delicate fragrant buns with a chocolate layer and a silky glaze made from curd cheese, butter, powder, and cinnamon have an amazing taste! It is difficult to resist the aroma of cinnamon and fresh baking, so the buns will not last long on the table.

Ingredients

For the test:

  • Milk – 200 ml
  • Butter (softened) – 50 g
  • Eggs – 2 pcs.
  • Sugar – 100 g
  • Flour – 480 g (3 glasses with a capacity of 250 ml) + for working with dough
  • Dry yeast – 11 g
  • Vanilla sugar – 10 g
  • Salt – 1 pinch

    For the layer:

  • Black chocolate – 100 g
  • Butter – 50 g

    For glaze:

  • Curd cheese – 140 g
  • Butter (softened) – 50 g
  • Powdered sugar – 120 g
  • Ground cinnamon – 1 teaspoon with a slide

Directions

  1. Add yeast to warm milk. Stir lightly and leave for 5 minutes.
  2. Combine eggs and sugar in a bowl.
  3. Beat with a mixer until white foam.
  4. Add vanilla sugar and a pinch of salt. Cut the softened butter into small pieces and also add to the egg mixture.
  5. Mix everything with a mixer until smooth.
  6. After that, pour in the milk with yeast.
  7. Mix with a spoon or whisk.
  8. After that add the sifted flour and knead the dough.
  9. The dough is soft, elastic, does not stick to your hands.
  10. Lightly grease the bowl with vegetable oil and put the dough there. Lightly grease the dough on top with vegetable oil and cover with a film.
  11. We put the dough for 1-1.5 hours in a warm place to rise.
  12. Lightly knead the dough and roll it out on a floured surface into a rectangular layer 3-4 mm thick. I got a layer of dough measuring 35×48 cm.
  13. Grease the dough with softened butter, leaving 2 cm unlubricated from one long edge.
  14. Rub the chocolate on a coarse grater.
  15. Sprinkle the surface of the dough evenly with grated chocolate, except for the same 2 cm from the edge.
  16. Beginning with a completely sprinkled long edge, roll the dough into a not very tight roll.
  17. Using a sharp knife, cut the roll into pieces 3 cm wide.
  18. On a baking sheet covered with parchment, carefully lay out the buns, opening them a little. You need to make a distance between the buns.
  19. Cover the buns with foil and leave warm for another 15 minutes. We turn on the oven to heat up to 170 degrees.
  20. Place the baking sheet with the matching buns in a preheated oven.
  21. We bake buns for 20-30 minutes.
  22. Making the icing: combine curd cheese, icing sugar, soft butter, and cinnamon.
  23. Mix everything with a mixer until smooth.
  24. Let the buns cool slightly and pour with cinnamon cheese glaze.
