Chicken Kebab with Herbs and Mushrooms

Chicken kebabs are prepared with mushrooms and green onions. Kebabs are fried with a spicy glaze sauce.

Servings: 4

Ingredients

  • Boneless chicken thighs – 650 g (about 6 pcs.)
  • Small champignons (washed) – 16 pcs. (about 180 g)
  • Green onions – 3-4 pcs.
  • Soy sauce – 6 tbsp
  • Mirin (sweet rice wine) – 6 tbsp
  • Honey – 6 tbsp
  • Rice vinegar – 1.5 tbsp
  • Fresh ginger (chopped) – 1.5 tbsp
  • Garlic (chopped) – 1 tbsp
  • Metal skewers 20-30 cm long – 8 pcs.
  • Vegetable oil for grill lubrication

Directions

  1. Turn on the grill to preheat to medium-high temperature.
  2. In a small saucepan, combine mirin, soy sauce, honey, rice vinegar, ginger and garlic and bring to a boil. Cook over medium heat for 10-15 minutes, about 2/3 cup of icing sauce should remain. Remove the stewpan from the stove, pour the sauce into two tins.
  3. Cut the chicken meat across by dragging into strips 1.5 cm wide (about 24 pieces in total). Cut the onion into 5 cm pieces (about 16 pieces in total). String chicken, onion, mushrooms on skewers in turn.
  4. Grease the grill rack with oil and put the kebabs on it. Fry for about 6 minutes, then turn over to the other side, brush with sauce, cook for 5-6 minutes. Turn the kebabs over again, brush with the remaining sauce and serve immediately.
