Correct Lula Kebab

Lula kebab is an oriental meat dish in the form of oblong lamb cutlets. Lula kebab is fried on skewers.

Servings: 8


  • Lamb – 1 kg
  • Lard (fat tail or kidney) – 200 g
  • Onions – 150 g
  • Salt – 1 teaspoon
  • Ground black pepper – 0.25-0.5 teaspoon
  • Zira – 0.5 teaspoon
  • Ground coriander – 1 teaspoon


  1. Prepare food.
  2. Take fresh meat (shoulder or thigh), remove fat, veins and films and chop very finely into minced meat on a wooden surface.
  3. Cut off a dry film from fat tail fat, then cut with a sharp knife, first into strips, and then to the size of a rice grain.
  4. Peel the onions, cut into small cubes.
  5. Mix meat, bacon and onion, salt, add black pepper and, if desired, cumin and coriander.
  6. Mix the minced meat well. Then the minced meat must be about 5 minutes. beaten off – picked up and thrown back into the bowl.
  7. Moisten your hands with water, take a piece of minced meat, mold an oblong cutlet out of it and string it on a skewer, spreading it along its entire length. Fry the kebab on rather hot coals until golden brown on the surface and pink-gray on the inside.
  8. The real correct lula kebab is ready.
