Fluffy Fried Egg with Ham, Tomatoes and Cheese

Instructions

  1. Preheat the oven to 200 ° C top / bottom heat. Butter 2 molds (each suitable for one portion).
  2. Separate the eggs and put the yolks on their side in a bowl. Beat the egg white with a pinch of salt until frothy.
  3. Cut the ham into small pieces, dice the tomatoes and cut the chives into rolls. I peel the tomatoes beforehand and remove the seeds.
  4. Divide the protein mixture into the two molds. Spread the ham, tomatoes, grated cheese and chives on top and put everything in the oven. Bake for about 10 minutes, until the mixture is a little firm. Now put 2 egg yolks in each of the molds and sprinkle some cheese on top if you like. Put again in the oven for about 3 - 4 minutes, depending on how firm you want the yolk to be.
  5. Before serving, pour a little pepper and paprika over the egg yolks and serve immediately.
  6. By whipping the egg white, the fried egg becomes nice and airy!
