  • 2 spring onion (s)
  • 1 tablespoon walnut oil
  • 1 handful mushrooms
  • 3 egg (s)
  • salt and pepper
  • Parsley, chopped
  • some parmesan, fresher, more grated

Instructions

  1. Cut the spring onions into rings and fry them briefly in a little oil. Quarter and add the mushrooms.
  2. Whisk the eggs with a little salt and pepper. Pour the beaten eggs into the pan, stir in and let them set.
  3. Put the egg mixture on a plate and serve with grated parmesan and chopped parsley.
