Ingredients
- 2 heads lettuce (lettuce, endive, lollo bianco or similar)
- 1 lemon (s)
- 250 g potato (s), floury and from the day before
- 150 g sour cream
- 125 g quark, 20%
- 0.5 ½ bunch chervil
- 1 pinch (s) salt
- 1 pinch (s) pepper
- 1 pinch (s) cayenne pepper

- Clean, rinse and pluck the salads into bite-sized pieces. Peel the lemon, also removing the white skin. Cut the lemon into very thin slices.
- For the potato cream, puree the peeled potatoes, sour cream, chervil and quark with the magic wand or in a blender. Season well with salt, pepper and cayenne pepper.
- Mix the lettuce and lemon wedges and serve with the potato cream.
