Ingredients

  • 16 slice (s) lamb chop (s) or neck s, the fat edge may be slightly reduced
  • 100 ml olive oil, good mild one
  • 2 lemon (s), add the juice
  • 2 teaspoons thyme, fresher
  • 3 teaspoons rosemary, fresher, chopped
  • 5 cloves garlic, pressed
  • 1 teaspoon oregano
  • 2 teaspoons pepper, coarse black
  • 0.5 teaspoon ½ hyssop, (an ancient aromatic herb) if available, savory if necessary.
  • 4 bay leaves
  • 1 teaspoon balsamic vinegar
  • some chili sauce, like Tabasco to taste

Instructions

  1. Remove any excess fat from the lamb chops and mix well with the ingredients in a sealable bowl. Seal and leave to marinate in the refrigerator for 1-2 days.
  2. Mix everything again after a day.
  3. Dab the meat before grilling, a little herbs may remain on it.
  4. Grill or roast to taste, salting is only done here when it`s done.
