Ingredients

  • 2 medium onion (s)
  • 4 tomato (s), ripe
  • 125 ml sunflower oil
  • 2 stock cubes
  • 1 teaspoon sugar
  • 2 tablespoon, heaped tomato paste
  • 1 chilli pepper (s), small piece, optional
  • salt
  • 1 teaspoon, heaped curry powder from the afro shop
  • 1 ½ cup basmati rice

Instructions

  1. Dice one and a half onions and put them in a small saucepan with the oil.
  2. Puree the tomatoes, the remaining half of the onion and the small piece of chilli with the blender. Put in sugar, it takes away the bitter taste.
  3. Heat the onions with the oil and season with salt. Pour the tomato onion juice into the hot oil (be careful, it can splash), stir in well and let it simmer on a low flame in the closed pot. Stir every now and then so that it doesn`t burn. Add stock cube. Mix the tomato paste with a little water until creamy and season with the curry powder. Then add to the sauce, stir and continue to simmer. Season to taste, possibly add a little more salt or use more curry to taste. When the oil begins to settle on the surface, remove the pan from the heat.
  4. Fill a large saucepan 1/3 with water and bring the rice to a boil in it. Since the rice has not been washed, I pour off the boiling water and fill up with fresh water up to about 2 cm above the rice level and now add salt. Cook in a closed saucepan over medium heat, do not stir. If the rice starts to boil over, lift the lid once and continue cooking on the lowest heat. The more water that has boiled away, the more small steam holes appear in the rice. Now the pre-cooked sauce can be added, but do not stir. The liquid in the sauce combines with the rest of the water so that the rice can cook to the end. If you are afraid that the rice will burn on the bottom, you can go through the rice with a knife and see whether there is still enough liquid left.
  5. Remove the pan from the stove as soon as the liquid has evaporated. Then stir gently so that the rice doesn`t get mushy.
  6. We really like to eat mackerel or chicken or boiled eggs and a fresh salad or avocado.
