Ingredients

  • 1 m-sized leg lamb
  • 2 large onions
  • 2 bulbs garlic
  • 2 medium tomato (s)
  • 4 medium potato (s)
  • Vegetables, depending on the season
  • 3 sprigs thyme
  • 250 ml red wine
  • 1 dash olive oil
  • 1 shot cognac
  • salt and pepper

Instructions

  1. Cut the leg of lamb 3 times (do not cut through). Makes 4 servings. Make small cuts around the leg and sprinkle with garlic.
  2. Place 1 sprig of thyme in each of the incisions. Salt and pepper the leg and place on an oiled baking sheet. Pour a shot of cognac over it.
  3. Cut the vegetables into large pieces and place on the tray with the remaining garlic cloves around the leg. Pour the salt, pepper and olive oil and some red wine over it.
  4. Preheat the oven to 220 degrees, add the baking sheet and reduce the heat to 175 degrees. Fry the leg for about 1 1/2 hours and pour red wine over it from time to time.
