Lemon Omelet with Barberry

Ingredients

  • Eggs – 2 pcs.
  • Lemon – 1/3 pc. (or 1 incomplete teaspoon of zest)
  • Dried barberry – 1 teaspoon
  • Salt to taste
  • Ground black pepper – to taste
  • Butter (for frying) – 25 g

Directions

  1. Break the eggs into a deep bowl. Wash the lemon, wipe dry. Remove the zest from the lemon using a fine grater. Add lemon zest to eggs. Dried barberry has also been added here.
  2. Add salt and black pepper. Stir until the egg yolk dissolves. Melt the butter in a skillet over medium heat. Pour the egg mixture into the skillet.
  3. Cover the skillet with a lid and fry the omelet over medium heat for about 2-3 minutes, until the egg mass sets. Turn the omelet over and fry for about 30 more seconds.
  4. Transfer the omelet from the skillet to a plate. Lemon omelet with barberry is ready to serve.
