Pork Chops in Tomato and Cheese Batter

The original version of the preparation of pork chops. Soft and juicy meat, and on top – a bright appetizing “coat”. In addition, tomato-cheese batter with parsley gives the chops a pleasant taste and aroma.

Ingredients

  • Pork (loin) – 300-400 g
  • Tomato paste – 50 g
  • Hard cheese – 50 g
  • Eggs – 3 pcs.
  • Flour – 110-120 g
  • Parsley greens – 20 g (5-6 sprigs)
  • Salt to taste
  • Ground black pepper – to taste
  • Vegetable oil (for frying) – 60 ml (4 tablespoons)

Directions

  2. Cut the pork into slices about 1 cm thick.
  3. We beat off the meat from both sides.
  4. Salt and pepper the meat.
  5. For batter in a bowl, combine eggs, tomato paste and salt. I added 1/3 teaspoon. Keep in mind that hard cheese is already salty, so add less salt than usual.
  6. Stir everything with a mixer until the tomato paste is homogeneous and dissolved.
  7. Rub hard cheese on a medium grater.
  8. Add cheese to the mass.
  9. Rinse the parsley, shake, chop finely and add to the mass.
  10. We mix everything.
  11. Then gradually add flour (50-60 g) to the mass, mix.
  12. Adjust the amount of flour – the batter should be thick enough.
  13. Breaded the beaten meat in the remaining flour.
  14. Then dip it in the batter.
  15. Heat 2 tablespoon in a frying pan. spoons of oil. Spread out a few chops and fry over medium heat for about 3 minutes, until browned, on one side.
  16. Turn the chops over and fry for another couple of minutes. Then cover the pan with a lid, reduce heat and bring to readiness for another 2-3 minutes.
  17. So fry all the chops, adding vegetable oil as needed.
  18. Pork chops in tomato and cheese batter are ready.
