Pork (loin) – 300-400 g
Tomato paste – 50 g
Hard cheese – 50 g
Eggs – 3 pcs.
Flour – 110-120 g
Parsley greens – 20 g (5-6 sprigs)
Salt to taste
Ground black pepper – to taste
Vegetable oil (for frying) – 60 ml (4 tablespoons)
For batter in a bowl, combine eggs, tomato paste and salt. I added 1/3 teaspoon. Keep in mind that hard cheese is already salty, so add less salt than usual.
Stir everything with a mixer until the tomato paste is homogeneous and dissolved.
Rub hard cheese on a medium grater.
Add cheese to the mass.
Rinse the parsley, shake, chop finely and add to the mass.
We mix everything.
Then gradually add flour (50-60 g) to the mass, mix.
Adjust the amount of flour – the batter should be thick enough.
Breaded the beaten meat in the remaining flour.
Then dip it in the batter.
Heat 2 tablespoon in a frying pan. spoons of oil. Spread out a few chops and fry over medium heat for about 3 minutes, until browned, on one side.
Turn the chops over and fry for another couple of minutes. Then cover the pan with a lid, reduce heat and bring to readiness for another 2-3 minutes.
So fry all the chops, adding vegetable oil as needed.
