Ingredients

  • 500 g pumpkin meat (e.. Hokkaido or butternut)
  • 500 g potato (s), peeled
  • 500 g minced meat
  • 150 g carrot (s), peeled
  • 10 g iner, fresher
  • 2 onions)
  • some oregano
  • salt and pepper
  • Paprika powder
  • nutmeg
  • 1 liter broth
  • some olive oil for frying
  • Chives, fresh or frozen
  • Parsley, fresh or frozen

Instructions

  1. Cut open the pumpkin, remove the seeds and cut the pumpkin flesh into medium-sized cubes. Peel the potatoes and cut them into cubes of the same size. Peel and dice the carrots.
  2. Also peel the ginger, cut very finely and fry briefly with the diced onions. Then add the minced meat, season a little and fry until crumbly. Then briefly fry the pumpkin flesh, potatoes and carrots.
  3. When everything is well seared, deglaze with the broth and season. Cook the soup on medium heat for about 20 - 30 minutes until everything is well done and serve. Finally add the chives and parsley.
