Seafood and Greens Salad

There are many recipes for seafood salads, but they all contain a large number of ingredients, and for this spicy salad you only need a couple of exotic shellfish and, of course, greens.

Servings: 4

Ingredients

  • Little octopuses – 350 g
  • Squid tentacles – 350 g
  • Olive oil – 2-3 tbsp
  • Chili pepper (peeled and cut into thin strips) – 1 pc.
  • Green onions (chopped) – 2 pcs.
  • Lemon wedges
  • Watercress – 3 handfuls
  • Baby spinach or arugula – 2 handfuls
  • Salt and black pepper to taste

For refueling:

  • Olive oil – 1/2 cup
  • One lime juice
  • Sugar – 1 teaspoon
  • Shallots (thinly sliced) – 2 pcs.
  • Tomato (peeled and finely chopped) – 1 pc.
  • Garlic (minced) – 1 clove

Directions

  1. First, you need to prepare the salad dressing. To do this, mix all the dressing ingredients in a small deep bowl, season with salt, pepper and whisk lightly.
  2. Rinse and dry squids and octopuses. Cut the squid into small pieces, make notches with a knife, forming patterns on the flesh of the mollusk. Heat the olive oil in a wok or other large skillet over high heat, place the clams in the skillet and fry, stirring occasionally, until the liquid has completely evaporated, about 1 minute. Add chili and green onions, fry, stirring occasionally, for about 1 minute. Season with salt, pepper and lemon juice.
  3. Rinse the watercress and spinach, dry on a paper towel and combine in a small bowl. Drizzle with the prepared dressing and mix well. Put fried seafood on green leaves, mix. Serve the salad immediately, garnished with lemon wedges.
