Ingredients

  • 6 handfuls spinach, cleaned, roughly chopped
  • 2 small shallot (s), diced
  • 0.25 teaspoon ¼ sugar
  • salt
  • Pepper, freshly ground
  • 0.5 ½ cup vegetable broth
  • Pecorino or parmesan, freshly grated
  • 2 tablespoon olive oil

Instructions

  1. Sweat shallots in olive oil until translucent and add sugar and salt. Add the cleaned and sliced spinach to the lightly caramelized onions, let it collapse a little, add the stock (amount to taste). Simmer briefly for about 1 to 2 minutes, rub pecorino or parmesan on top, season to taste, done.
  2. Ideal as a side dish for spinach dumplings or potatoes with egg.
