Sponge Cake with Quince

Recipe for a fluffy and fluffy sponge cake with quince, which is prepared in literally a matter of minutes! To prepare a biscuit dough according to this recipe, you do not need to separately beat the egg whites and yolks.

Ingredients

  • Eggs – 3 pcs.
  • Sugar – 140 g
  • Wheat flour – 150 g
  • Baking powder – 0.5 teaspoon.
  • Salt – 2 pinches
  • Zest of 1 tangerine
  • Quince – 1-2 pcs. (depending on size)
  • Water – 50 ml
  • Butter (for greasing the mold) – 10 g

Directions

  1. Prepare the food you need.
  2. Rinse the quince, thoroughly rinsing off the layer of lint on its surface. Cut in half, remove seeds, rinse again and cut into medium cubes. Pour in 50 ml of water and place in the microwave in a suitable container, covered with a lid on top, for 2-4 minutes, for steaming (choose the time depending on the power of your appliance).
  3. Break the eggs into the bowl of a mixer (food processor), add salt and sugar there. Grate the tangerine zest on a fine grater. Whisk for 4-5 minutes.
  4. Stir in sifted wheat flour with baking powder. Whisk at low speed for about 2 minutes.
  5. Grease a baking dish with butter, put the steamed quince, which has been thrown in a colander, into it.
  6. Pour the quince dough.
    Place in a preheated oven. Bake the quince sponge cake at 180 degrees for 25-30 minutes, until golden brown. Do not open the oven.
  7. As soon as the biscuit is ready, turn off the oven, but do not remove the cake from the oven for another 10 minutes so that it does not settle from the cold air. After that, take the form out of the oven, remove the biscuit from it.
  8. The cooled quince sponge cake can be sprinkled with icing sugar.
