Ingredients
- 800 ml vegetable stock
- 3 tablespoon teriyaki sauce
- 1 tablespoon five-spice powder
- 1 tablespoon seaweed flakes
- 1 teaspoon sriracha sauce
- 1 teaspoon ginger
- 5 shiitake mushrooms, dried
- 2 spring onion (s)
- 2 cloves garlic)
- 1 head broccoli
- 1 bunch soup greens, without carrots
- 0.5 ½ bunch coriander
- 0.5 ½ bunch Thai basil
- 1 handful bean sprouts
- WanTan (WanTan dumplings), vegan

- Pour hot water over the shiitake mushrooms, soak for at least 1 hour and cut into strips. Cut the soup greens into small pieces. Divide the broccoli into florets. Slice the spring onions and set aside the green part. Finely dice the garlic and ginger.
- Heat some oil in a large saucepan. Briefly sweat the garlic, ginger and coriander. Add soup greens and spice powder and sauté briefly. Deglaze with the broth. Stir in the algae flakes, sriracha and teriyaki sauce. Add the mushrooms and let the soup simmer for 10 minutes.
- Add the dumplings and broccoli and simmer for 8-10 minutes.
- Arrange in bowls and garnish with the green part of the spring onions, coriander, basil and sprouts.
