Ingredients

  • 400 g ame (saddle wild boar), released

For the marinade:

  • soy sauce
  • Oil (sesame oil)
  • Wine, white
  • tomato ketchup
  • 100 g bacon, mixed
  • 1 large onion (s)
  • 4 cloves garlic
  • 1 handful porcini mushrooms, dried
  • 100 ml white wine
  • 100 ml cream
  • salt
  • pepper

Instructions

  1. Soak the mushrooms in hot water. Finely parry the meat, cut into slices, mix the ingredients for the marinade together and soak the meat in it for at least half a day. (Just needs to be coated with the marinade).
  2. Cut the bacon into very fine slices and dice, also finely dice the onions, fry both, add the meat slices and sear them too. Deglaze with the mushrooms along with the soaking water and white wine. Press in the garlic. Let it simmer for about 15 minutes with the lid closed. After 10 minutes add the cream. Possibly add some more wine. Season to taste (possibly with a little porcini mushroom oil) and serve with fried potatoes.
