Ingredients

  • 200 g spelled rains
  • 0.5 ½ cube yeast, fresh
  • 300 ml water, lukewarm
  • 200 g flour
  • 200 g wheat flour (whole rain)
  • 100 g semolina, (durum wheat semolina)
  • 100 g sunflower seeds or pumpkin seeds
  • 2 teaspoons salt
  • 2 tablespoon oil, (sunflower oil)
  • 2 tablespoon honey
  • Flour, for dusting
  • Cereals - flakes for sprinkling

Instructions

  1. Cover the spelled with cold water and bring to the boil and allow to cool again.
  2. Mix the yeast with half of the water. Put the flour with semolina, grains, salt, oil, honey and the still lukewarm spelled in a bowl.
  3. Pour in the yeast mixture. Knead everything with the rest of the water to form a shiny dough. Cover and let rise for about 1 hour.
  4. Then knead the dough and let it rest for 10 minutes.
  5. Divide the dough into 16 portions and roll each portion into a ball. Cover and let rise for 40 minutes on a floured baking sheet. Preheat the oven to 225 ° C.
  6. Cut the rolls crosswise at the top with scissors. Brush with cold water and sprinkle with the flakes. Bake in the oven for 10 minutes, then reduce the heat to 200 ° C and bake for about 15 minutes.
