Ingredients

  • 500 g onion (s), finely diced
  • 800 g potato (s), finely diced
  • 50 g butter
  • 1 liter vegetable stock
  • 2 tablespoon mustard
  • salt and pepper
  • 4 sausages, fresh
  • Oil, for frying
  • Chives, fresh

Instructions

  1. Sweat the onions and potatoes in the butter, fill up with the stock and cook for about 15 minutes until soft. Mash everything and season to taste with mustard, salt & pepper.
  2. Fry the bratwurst in a pan until crispy brown, cut into slices and add to the soup. Garnish with fresh chives if you like.
