Ingredients

  • 1 medium onion (s)
  • 2 cloves garlic
  • 1 chilli pepper (s)
  • 6 small potatoes
  • 2 carrot (s)
  • 1 leek, (small)
  • 1 tuber fennel
  • 2 small bell peppers
  • 4 tomato (s)
  • 1 apple
  • some vegetable broth or poultry broth
  • Herbs (thyme, rosemary, parsley)
  • olive oil
  • salt and pepper
  • Spicy paste, hot (Erös Pista or Sambal Oelek)

Instructions

  1. This recipe is my own creation and should help me get rid of my flu quickly. But it is very healthy even without illness!
  2. Finely chop onion, garlic and chilli pepper and sauté in olive oil in a saucepan. Roughly chop the potatoes and carrots (rustic) and sweat them too. Add a little broth and let it simmer for about 5 minutes. Then add the fennel and leek and continue to simmer. Top up the stock as you like, depending on how soupy you want the dish to be. Add tomato quarters, diced peppers and the chopped apple (which gives the dish a delicious, sweet note) and simmer for about 10 minutes.
  3. Finally, taste more or less spicy and add the freshly chopped herbs.
  4. Tastes just as good warmed up!
