Ingredients

  • 250 g millet
  • 2 tablespoons oil
  • 1 onion (s), diced
  • 1 clove (s) garlic, diced
  • 750 ml water
  • 3 tablespoon vegetable stock, instant
  • 1 bay leaf

Instructions

  1. Sprinkle the millet in a fine sieve with hot water and allow to drain.
  2. Heat the oil. Briefly sweat the diced onions and the clove of garlic in it. Add the millet and fry with it. Pour in the water and bring to the boil. Add the vegetable stock and the bay leaf. Then let the whole thing swell over a low heat for about 35 minutes and season to taste.
  3. To serve, either fill in portions into small cups - rinse them with cold beforehand - and turn them out or portion with the ice cream spoon. Serve with fresh herbs of your choice.
  4. Hirsotto goes well in vegetarian cuisine, but also as an accompaniment to meat dishes.
