Ingredients

  • 500 g pasta (e.. orecchiette)
  • 400 g turnip stalk (Cima di rapa) or broccoli
  • Salt water
  • 50 g cheese (pecorino), rated
  • 4 tablespoon parmesan, grated
  • 1 chilli pepper (s)
  • 1 clove garlic
  • 2 anchovy fillet (s) in oil
  • salt and pepper

Instructions

  1. Wash the vegetables under cold running water, cut roughly and cook in salted water for 10 minutes. Take out with a slotted spoon and squeeze out lightly. Cook the pasta in the cooking water until al dente.
  2. In a large saucepan, heat the oil over medium heat. Add the anchovies and dissolve. Dice the garlic and chilli, add and fry lightly. Be careful, the garlic burns quickly.
  3. Now add the vegetables and fry them briefly. Add some pasta water. Season with salt and pepper.
  4. Put the cooked noodles in the sauce and mix everything together. Sprinkle the parmesan and pecorino cheese on top and serve hot.
