Lush Coconut Sponge Cake on Kefir (in a Low Cooker)

Today I baked an incredibly fluffy coconut sponge cake. This is a very simple, quick, and economical recipe. And thanks to the multicooker, you don’t need to follow it. Only pull it out at the end of the program.
Such a biscuit is perfect for making a cake, or just like a cupcake with tea. Baking in aslow cooker.

Ingredients

  • Flour – 140 g
  • Coconut flakes – 50 g
  • Baking powder – 1 teaspoon
  • Salt – on the tip of a knife
  • Sugar – 100 g
  • Eggs – 2 pcs.
  • Vegetable oil – 60 g
  • Kefir – 125 g

Directions

  1. Whisk a little kefir, eggs, vegetable oil.
  2. Add sugar, salt, baking powder, coconut and flour. Stir without beating. I got this dough (even with small lumps).
  3. Pour the dough into a slow cooker, set the “Baking” mode for 40 minutes.
    After the signal, check the readiness with a toothpick and let the biscuit stand with the lid closed for another 5 minutes on heating.
  4. Then take out the biscuit and let it cool.
  5. The biscuit turns out to be slightly moist, but at the same time very soft, airy and fluffy! Recomend for everybody!
