Meat Salad with Celery, Onions and Soy Sauce

A salad of fresh stalk celery with fried meat, onions, garlic, and herbs will appeal to all lovers of savory appetizers and Asian-style dishes. Celery as a base gives the salad volume and juiciness, and pieces of fried pork seasoned with soy sauce and spices add a piquant taste and satiety. Fresh herbs and vegetables, when mixed with hot sauce, are exposed to minimal heat and remain slightly crispy, while the meat is spicy and tender in taste. Try it!

Ingredients

  • Celery (stem) – 1.1 kg
  • Pork (loin) – 400 g
  • Onions – 180 g
  • Garlic – 20 g
  • Fresh parsley – 30 g
  • Soy sauce – 60 ml
  • Ground coriander – 0.5-1 teaspoon
  • Ground red pepper – 0.5-1 teaspoon (to taste)
  • Salt to taste
  • Ground black pepper – to taste
  • Vegetable oil – 120 ml

Directions

  1. The meat can be placed in the freezer for 20-30 minutes. Cut the pork into thin strips. When the meat is slightly frozen and becomes a little tougher, it will be more convenient to cut it into thin slices, and then into strips. Peel the onions and cut them into thin feathers.
  2. Disassemble the celery into individual stems. Cut each stem into 6-8 cm pieces, and then slice each piece lengthwise into thin strips.
  3. Place the chopped celery in a salad bowl, sprinkle with 1 or 2 small pinches of salt and stir well. While you prepare the rest of the salad ingredients, let the celery steep to let the juice drain.
  4. Heat vegetable oil in a skillet over high heat. Place the meat into strips and stir-fry for 5-6 minutes, until the pieces of meat turn white.
  5. Reduce heat to medium. Add ground coriander to the pan, stir and fry for another 30 seconds.
  6. Add soy sauce. Stirring, fry the meat for another 3 minutes. The meat juice should evaporate and the sauce should thicken slightly.
  7. Then add chopped onions and ground red pepper to the pan. Adjust the amount of red pepper to your liking.
  8. Mix everything well, fry the meat with onions for another 1 minute and turn off the heat. You do not need to fry the onions until cooked. It will soften with the residual heat but remain slightly crispy.
  9. Squeeze out the celery lightly and drain off all the juice that has emerged, it is not needed.
  10. Add hot meat with onions and sauce to a salad bowl with chopped celery.
  11. Chop parsley and garlic cloves finely. Add chopped garlic and herbs to the rest of the salad. Save 1-2 parsley sprigs for garnish if desired.
  12. Mix everything well.
