Ingredients

  • 350 g seasonal veetables, cut into bite-sized pieces
  • 220 g chickpeas, round
  • 0.75 teaspoon ¾ cumin, ground
  • 0.25 teaspoon ¼ cayenne pepper
  • 0.5 teaspoon ½ coriander, ground
  • 0.75 teaspoon ¾ paprika powder, noble sweet
  • salt
  • 270 ml water, cold
  • 1 liter vegetable oil for frying

Instructions

  1. Heat the oil in a saucepan. It takes quite a while. In the meantime, vegetables and dough can be prepared. But make sure that the oil doesn`t start to smoke!
  2. When preparing the vegetables, make sure that the vegetables are cut very small or thin, as they are only fried and not pre-cooked!
  3. For the dough, put the chickpea flour in a bowl and mix in all the spices and salt. Pour in the cold water slowly and beat the mixture with a whisk until a smooth, thick dough is formed.
  4. Put the batter in a deep plate. Add a portion of vegetables and turn in the batter.
  5. Try to see if the oil is hot enough: If a drop of dough immediately hisses to the surface, it is hot enough. In this case, turn the hotplate down to medium heat.
  6. Dip the vegetables in the batter and gradually add them to the hot fat using a fork. Fry the pakoras for 7-9 minutes each until they are golden brown and crispy. Remove and degrease on kitchen paper. Serve immediately or keep warm for a short time at 125 ° C in the oven.
