Pies Made of Yeast-Free Dough on Kefir, with Meat and Rice

Today I propose to cook pies with meat and rice from a quick yeast-free dough on kefir. I suggest cooking in two versions: baked in the oven and fried in a pan. The meat pies are delicious, hearty and truly homemade.

Ingredients

For the dough:

  • Eggs – 2 pcs.
  • Sugar – 2 teaspoon
  • Salt – 1 teaspoon
  • Kefir – 500 ml
  • Soda – 1 teaspoon.
  • Vegetable oil – 2-3 tbsp
  • Flour ~ 800 g (+/-)

For filling:

  • Minced meat – 450 g
  • Round rice – 100 g
  • Water – 250 ml
  • Onions – 1 pc.
  • Salt to taste
  • Ground black pepper – to taste
  • Vegetable oil – 3 tbsp

For oven-baked pies:

  • Yolk (for lubrication) – 1 pc.

For pan-fried pies:

  • Vegetable oil – for frying

Directions

  1. First, let’s prepare the filling. Put the washed rice into a saucepan, add salt and vegetable oil. Cook for 15-20 minutes.
  2. While the rice is cooking, finely chop one onion.
  3. Fry in vegetable oil.
  4. Then add the minced meat and fry until the liquid evaporates.
  5. Add salt and black pepper. We mix.
  6. Add the cooked rice and mix well again. The filling for the pies is ready!
  7. While the filling is cooling down, let’s make the dough. Break 2 eggs into a bowl, add salt and sugar. We mix.
  8. Pour in kefir and stir. Take kefir not very fresh – the older the better (fat-free kefir will not work).
  9. Next, pour in soda, pour in sunflower oil. We mix.
  10. We introduce flour. While the dough allows, knead in a bowl with a spoon.
  11. Then we put the dough on the table and continue to knead with our hands. Add flour if necessary. The pie dough should be soft, tender and elastic.
  12. We divide the dough into 4 parts, form a ball from each part. We will form pies from one part, and put the rest aside and cover so that the dough does not dry out.
  13. We form a sausage from the dough, cut into 6 parts.
  14. We form pies. We stretch the resulting dough pieces with our fingers, forming cakes with a diameter of 10 cm.Place the filling inside the cakes.
  15. Press the edges. Thus, we form all the pies. Before frying the pies, press lightly so that the height is no more than one centimeter.
  16. Put the pies, seam down, in a pan with heated vegetable oil. It is better to take a pan with a thick bottom; it does not need to be covered with a lid.
  17. Fry for 3-4 minutes on each side, until golden brown. The heat should be moderate so that the patties do not burn, but they are well done.
  18. Put the finished pies on a plate with a paper towel so that all the excess fat is gone.
  19. Pies fried with meat and rice are soft and fluffy.
  20. If you don’t like fried cakes, then bake them in the oven. We spread the formed pies on a baking sheet covered with parchment paper with the seam down.
  21. Lubricate the surface of the pies with yolk, using a silicone brush.
  22. We send it to an oven preheated to 180 ° C for about 20 minutes.
  23. Baked pies with meat and rice are ready. Can be served on the table.
