Ingredients

  • 500 g pork fillet (s)
  • 2 tablespoon olive oil
  • salt
  • pepper
  • 2 large onions, finely diced
  • 60 g herb butter
  • 400 g chanterelles
  • 250 g cooked ham or Praue ham, finely diced
  • 400 ml cream
  • 1 teaspoon, heaped cornstarch, (Gustin)
  • 150 g cheese, Emmentaler, rated

Instructions

  1. Fry the pork fillet whole, season with salt and pepper and leave to rest wrapped in aluminum foil.
  2. After cooling, cut into slices and place next to each other in a greased baking dish.
  3. Steam the onions in the melted herb butter until translucent, add the chanterelles and fry them. Add the ham cubes and the cream, season with salt and pepper. Let everything boil down and tie with Gustin.
  4. Pour the chanterelle vegetables over the pork fillets, sprinkle with the cheese and bake in the oven preheated to 180 ° C for 30 minutes until the cheese is nicely browned.
  5. Side dish: ciabatta
