Pumpkin Donuts

Pumpkin donuts are ruddy donuts with a bright crumb and orange flavor! The dough is yeast, prepared on the basis of orange juice, with the addition of pumpkin puree. This pumpkin dough rises well and makes great donuts!

Ingredients

  • Pumpkin puree – 350 g
  • Orange – 1 pc.
  • Eggs (only yolks) – 3 pcs.
  • Flour – 350 g
  • Dry yeast – 5 g
  • or fresh yeast – 15 g
  • Sugar – 25 g
  • Salt – 2 pinches
  • Warm water (37-39 ° С) – 50 ml
  • Sunflower oil (for frying) – 300 ml
  • Powdered sugar (for serving) – to taste

Directions

  1. To prepare pumpkin puree, peel the pumpkin from the peel and seeds, cut it into small pieces.
  2. Transfer the sliced ​​pumpkin to a saucepan. Pour in 100 ml water and cook the pumpkin covered for about 15-20 minutes or until the pumpkin is completely cooked.
  3. Try mashing one piece of pumpkin with a fork – if that’s easy, remove the dishes from the stove.
    (You can also bake the pumpkin for mashed potatoes in the oven.)
  4. Blend the finished pumpkin with a blender until you get a smooth pumpkin puree. Measure out the required amount of puree (350 g) and let it cool.
  5. While the pumpkin puree is cooling, prepare the dough. Pour 50 ml of warm water (37-39 ° С) into a bowl, add a teaspoon of sugar from the total volume, dry yeast, and a tablespoon of flour from the total mass.
  6. Stir and leave the dough in a warm place for 15 minutes.
  7. Pour the prepared dough into a large bowl, add pumpkin puree and egg yolks.
  8. Add orange juice, remaining sugar, and salt to this.
  9. Stir the base with a whisk.
  10. Gradually add all the flour and knead the dough. Cover the bowl with pumpkin dough with a clean kitchen towel and leave in a warm place for 1.5 hours. During this time, knead the dough 2-3 times.
  11. When the yeast donut dough is ready for the last time, do not crush it.
  12. Heat enough sunflower oil in a deep saucepan or saucepan. Take two tablespoons of the dough, forming small balls. Dip the balls in the heated oil. Fry donuts 5-6 at a time. When frying, make sure that the fire is not too high so that the donuts have time to fry inside.
  13. Fry the donuts until golden brown. Put the finished donuts on a napkin, simultaneously dipping the next batch into the butter.
  14. You end up with a huge bowl of pumpkin donuts!
  15. When serving, pumpkin donuts must be sprinkled with powdered sugar, and generously, since they are not very sweet by themselves.
  16. Pumpkin donuts are delicious both hot and on the second day. Sugar-free green tea is delicious!
