Ingredients

For the dough:

  • 200 g flour
  • 1 teaspoon salt
  • 100 g butter
  • 0.75 dl ¾ water

For covering:

  • 1 tablespoon oil
  • 600 g pumpkin meat, diced
  • 1 bunch parsley
  • 1 dl white wine, drier
  • Herbal salt and pepper
  • 150 g cheese, rated
  • 100 g breakfast bacon thinly sliced
  • 2 egg (s)
  • 2 dl sour cream
  • 0.5 ½ handful pumpkin seeds

Instructions

  1. Quickly make a grated dough out of the dough ingredients and line a tart pan or a round tray with it.
  2. Heat the oil and gently fry the pumpkin cubes for 10 minutes. Chop the parsley and add to it. Deglaze with the white wine and season with pepper and herbal salt.
  3. Spread 100 g grated cheese on the dough base and place the pumpkin vegetables on top. Whisk eggs and sour cream together, season with salt and pepper and pour evenly over the top. Place the breakfast bacon on top in a star shape and sprinkle with the remaining grated cheese. At the end, sprinkle the pumpkin seeds on top and bake the flan at 220 degrees for 30-40 minutes.
