Ingredients

  • 25 g bacon, leaner
  • 1 teaspoon oil
  • 1 large onion (s)
  • 30 g butter
  • 2 cup rice, (risotto rice)
  • 3 cup broth
  • 1 cup water
  • 2 bay leaves
  • 1 pinch saffron
  • 100 g cheese, (old Gouda)
  • salt and pepper

Instructions

  1. Finely dice the bacon and fry in hot oil. Peel the onion and chop finely. Add the butter to the bacon, add the onions and let translate while stirring. Stir in the rice and roast until it is translucent.
  2. Top up with broth and water. Add the bay leaves, saffron and the cheese cut into small cubes. Cover the risotto and let it soak over a low heat for about 20 minutes.
  3. Fish out the bay leaves and season the risotto with salt and pepper.
