- 1 lemon (s), organic, grated zest, half the juice
- 500 g tomato (s)
- 200 g cottae cheese
- some basil leaves, fresh
- 1 tablespoon balsamic vinegar
- 1 tablespoon olive oil

- Wash the lemon, rub the peel, squeeze the juice from 1/2 lemon. Mix the cottage cheese with the grated lemon zest and lemon juice in a bowl.
- Cut the tomatoes into cubes and mix in a second bowl with the olive oil and balsamic vinegar. Season to taste with salt and pepper. Cut the basil leaves into small pieces and stir in.
- Arrange the tomatoes on the cottage cheese and garnish everything with a little basil.
