  • 4 egg (s)
  • 1 pinch (s) white pepper
  • 1 pinch (s) salt
  • 1 teaspoon sugar
  • 2 tablespoon mirin from the Asian market
  • 2 teaspoon soy sauce
  • oil

Instructions

  1. In a bowl, stir together the eggs, salt, sugar, white pepper, mirin and soy sauce.
  2. Heat a pan on medium heat and use a brush to spread the oil evenly over the pan. Pour a quarter of the egg mixture into one half of the pan and slowly let the egg set. When the bottom of the omelette is firm, wrap or roll the egg from the edge. The top of the omelette should always be runny so that it sticks together.
  3. Add another portion of the egg mixture to the pan. Once the bottom is firm, continue rolling up the omelette. Repeat the process until there are no more eggs left. At the end, let both sides fry for one minute each.
  4. Take the rolled omelette out of the pan, place it on a board and cut open as desired.
