Vegetable Casserole with Zucchini and Onions (in a Slow Cooker)

Vegetable casserole of zucchini (zucchini) and onions in a slow cooker is prepared with sour cream and cheese. The casserole can be either an independent dish or a side dish.

Ingredients

  • Zucchini (zucchini) – 500 g
  • Bulb onions, large – 1 pc.
  • Greens (green garlic, dill, parsley) – 20 g
  • Hard cheese – 150 g
  • Sour cream – 150 ml
  • Eggs – 2 pcs.
  • Butter – 50 g
  • Vegetable oil, for frying – 3 tablespoon.
  • Salt – 1 teaspoon (taste)
  • Black pepper – to taste

Directions

  1. Prepare food for cooking vegetable zucchini and onion casserole.
  2. Finely chop the onion.
  3. Cut the courgettes (zucchini) into cubes.
  4. Place vegetables in a multicooker bowl in preheated vegetable oil.
  5. In the “Baking” mode, fry the onion and zucchini for 15 minutes until light golden brown.
  6. At this time, cut the greens.
  7. Mix sour cream with eggs, salt, and pepper mixture.
  8. Grate the cheese, add some of the cheese to the sour cream with eggs, add warm butter and herbs. Mix everything.
  9. When the vegetables are fried, cool them slightly, mix them with the egg-sour cream sauce, put them in a multicooker bowl.
  10. Cook vegetable casserole in a slow cooker in the “Baking” mode for 1 hour.
  11. Zucchini and onion vegetable casserole, in a slow cooker, ready. It turned out to be tender, tasty, and beautiful. Sprinkle the vegetable casserole with cheese and serve.
