Ingredients

  • 1 small onion (s), red
  • 2 kg turkey (turkey thigh)
  • 1 tablespoon chili powder
  • 0.25 teaspoon ¼ cumin powder
  • 1 teaspoon salt
  • 0.5 teaspoon ½ black pepper
  • 0.5 teaspoon ½ cayenne pepper
  • 125 ml ketchup
  • 250 ml chicken broth
  • 60 g suar, brown
  • 0.5 teaspoon ½ sugar beet syrup or molasses
  • 2 tablespoon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon apple cider vinegar

Instructions

  1. Peel the skin off the turkey thighs. Peel and chop the onion and place in a roasting pan or large saucepan.
  2. Preheat the oven to 130 ° C, if possible only bottom heat, otherwise top / bottom heat.
  3. Rub the turkey legs with chili powder, cumin, salt, pepper and cayenne pepper and place on the onion. Mix the ketchup, chicken broth, sugar, beet syrup or molasses, mustard and Worcestershire sauce in a bowl and pour over the turkey legs. Put the lid on the roasting pan / saucepan - very important - and place in the middle of the oven.
  4. Leave the turkey thighs in the oven for 3 1/2 to 4 1/2 hours, after 3 1/2 hours try it out to see whether the meat can be pulled apart easily. If it is still difficult, leave the thighs in the oven for 1 more hour.
  5. Then take the turkey thighs out of the oven and pull the meat apart with two forks on a cutting board, removing the bones.
  6. Put the meat back into the roasting pan / saucepan and mix with the sauce, add the 1 tablespoon apple cider vinegar and season to taste.
  7. Spoon the pulled turkey meat into hamburger buns and serve with pickles and / or American coleslaw.
