Ingredients

  • 2 fish (s), sea bream, whole
  • 1 pumpkin (se), (patisson)
  • 5 beefsteak tomato (s)
  • 2 tablespoon sesame oil
  • 2 tablespoon butter
  • 1 tablespoon soy sauce
  • 0.5 ½ onion (s)
  • clove garlic
  • 2 slices lemon (s)
  • 1 teaspoon sugar
  • Sea salt, coarse
  • pepper
  • Chilli flakes, dried
  • olive oil
  • 2 slices lemon (s)

For the fish:

  • 1 teaspoon coriander seeds
  • 0.5 teaspoon ½ pepper, white
  • 1 teaspoon coriander powder
  • 1 teaspoon dill, dried
  • 0.5 ½ lemon zest, grated

Instructions

  1. Cut the garlic and onion into cubes. Fry in sesame oil in a high pan. Add sugar and let caramelize. Peel and dice the tomatoes. Also add to the pan and bring to the boil. Reduce the heat and let it simmer for about 30 minutes. Season to taste with salt, pepper and chilli.
  2. Peel the patisson squash and cut into steaks as thick as a finger. Add 1 tablespoon olive oil and soy sauce to the pumpkin and marinate for about 1 hour. Fry the pumpkin steaks in 1 tablespoon of olive oil and 1 tablespoon of sesame oil for about 2 minutes on each side, add olive oil if necessary. Degrease on a kitchen towel and season with sea salt.
  3. Make a fish seasoning from the ingredients listed under For the fish. To do this, grind all the ingredients in a mortar.
  4. Wash the sea bream inside and out. Rub with the fish spice. Fill each with 1 tablespoon butter and a slice of lemon. Place on a sheet lined with aluminum foil and bake or grill at 200 ° C top / bottom heat for about 20 minutes.
