Ingredients
- 300 g carrot (s)
- 3 egg (s)
- 2 slices cooked ham
- 100 g iceber lettuce
- Oil for frying
For the dressing:
- 1 tablespoon natural yogurt
- 0.25 tablespoon ¼ olive oil
- 1 pinch (s) salt and pepper
- 1 squirt lemon juice
- 1 spring onion (s)

- Remove the ends from the carrots and peel them. Then cut them into small pieces in a food processor or cut them yourself into very small, elongated pieces. Mix the carrots in a bowl with an egg. The egg ensures that the carrots stick together in the pan.
- Put the pan on medium heat and fry the two slices of boiled ham until crispy. Now heat 1/4 tablespoon of oil in the pan and fry the carrots in the form of burger patties. To form a round circle, I use a silicone egg mold. Fry for 2 minutes on both sides. In between, fry the other two eggs as fried eggs with the egg dish.
- When these ingredients are done fried, toss the iceberg lettuce in the pan until it has acquired some color.
- For the dressing:
- Mix the natural yoghurt, olive oil, fresh lemon juice and a pinch of salt / pepper and add the finely chopped spring onions.
- Stack the burger:
- Spread the carrot patty, a slice of ham, a teaspoon of dressing over the ham, then the iceberg lettuce, then the egg and, if you like, another carrot patty.
- Notes: The carrot burger is not only low-carb, it also impresses with its taste and is filling. In addition, a burger only has 295 calories.
