Ingredients

For the broth:

  • 800 g beef, suitable are hih ribs (a little fatter) or boiled beef (rather lean)
  • 5 bones, (meat bones)
  • 2 marrow bones, at will
  • 2 carrot (s)
  • 1 leek, small
  • 0.25 ¼ celeriac
  • 0.5 ½ bunch parsley
  • 1 large onion (s), (with skin)
  • 1 teaspoon peppercorns
  • 2 carnation (s)
  • 3 grains allspice
  • 3 juniper berries

For the soup:

  • 300 g carrot (s), diced
  • 300 g kohlrabi, diced
  • 200 g potato (s), diced
  • 3 handfuls peas, frozen
  • Noodles, (soup noodles)
  • salt
  • Pepper from the grinder

Instructions

  1. Bring the bones to the boil with a little water and drain completely.
  2. Halve the onion, clean the leek and cut into 2 to 3 pieces. Peel the carrots and cut in half crosswise. Also clean the celery and cut into 2 to 3 pieces. Place in the pressure cooker with the meat, bones, vegetables and spices. Pour 1 liter of water on top. Close the pot, bring to the boil and cook on the 2nd ring for 60 minutes. Allow to evaporate according to the instructions and open.
  3. In the meantime, cook the diced vegetables separately for about 10 minutes. Add the peas at the end and only briefly heat them up.
  4. Cook the soup noodles according to the instructions on the packet.
  5. Remove the meat from the broth and cut into pieces. Pour the soup through a sieve, season with salt and pepper. Add the vegetables. Noodles are enough, otherwise they will be too soft.
  6. This soup is our elixir for flu, intestinal upset or just like that. For my dad it was the best soup in the world.
