Ingredients

  • 280 g flour, smooth
  • 3 teaspoons baking powder
  • 1 pinch (s) salt
  • 125 g suar
  • 2 large egg (s)
  • 200 ml milk
  • 6 tablespoon oil (sunflower)
  • 1 packet vanilla sugar
  • 6 tablespoon jam, e.g. apricot
  • 125 g butter
  • 125 g suar

Instructions

  1. Sift the flour, salt, and baking powder into a large bowl. Mix in the sugar. Whisk eggs in a bowl. Stir in milk, oil and vanilla sugar. Make a well in the middle of the dry ingredients and pour the liquid ingredients into it. Mix briefly with a wooden spoon. Line 12-cup muffin pan with paper liners. Pour half of the dough into the molds with a tablespoon, put a dollop of jam on each one and then fill up with the remaining dough. Bake in the preheated oven at 200 ° C for about 20 minutes.
  2. In the meantime, melt the butter for the topping. Put the sugar in a large, shallow bowl. Let the muffins cool in the mold for 5 minutes. First dip the top of the muffins in the melted butter, then toss them in the sugar. Let cool on a wire rack.
