Ingredients

  • 3 egg (s)
  • 250 g flour
  • 500 ml milk
  • 2 tablespoon vegetable oil
  • a bit salt
  • 1 tablespoon sugar
  • 1 apple, quartered, very thinly sliced
  • some lemon juice, to taste
  • maybe cognac, a shot

Instructions

  1. Separate eggs. Mix egg yolks with sugar and salt. Add half of the lukewarm milk, flour and oil in portions. Stir well again and again. Now gradually add the rest of the lukewarm milk. Keep stirring. Beat the egg whites until stiff and fold in well. Pass the dough through a sieve to remove any lumps of dough. Then let it rest for 30 minutes.
  2. Drizzle the grated apples with lemon juice. The pan should only be coated with a little oil for the first blini. Pour the desired amount of dough (a good 4-6 tablespoon) into the pan. Quickly spread a few pieces of apples on the blini. If the surface of the dough becomes firm, carefully turn the blini and fry the other side until golden.
