Ingredients

  • 250 g butter, soft
  • 350 grams sugar
  • 20 g vanilla suar
  • 100 g rock suar, crumble
  • 2 pinches salt
  • 4 egg (s), size M
  • 120 ml coffee, strong, cooled
  • 1 tablespoon rum, brown, 54%
  • 1 orange (s), (zest + juice it)
  • 375 g flour, type 405
  • 125 g cornstarch
  • 1 ½ teaspoon baking powder
  • 50 g cocoa powder
  • 0.5 teaspoon ½ cinnamon
  • 1 pinch (s) cardamom
  • 200 g chocolate, coffee cream
  • 4 teaspoon, heaped coffee powder
  • 0.25 liter ¼ water, (for making coffee)

Instructions

  1. The amount of dough is exactly enough for 26 muffins (if you don`t nibble on the dough).
  2. Preparation:
  3. First let the coffee run through 4 measuring spoons of coffee powder and 1/4 l of water. Let cool down well!
  4. Rub the peel of the orange and set aside the zest. Squeeze the orange. In a small measuring cup, fill 120 ml of the cold coffee with the squeezed juice of the orange to 125 ml and add 1 tablespoon rum.
  5. Chocolate: Chateau Kaffee Sahne - white chocolate on premium coffee cream chocolate.
  6. Cut each individual piece of chocolate into 3 pieces with a knife.
  7. In a bowl, mix the flour with mondamine, 1 1/2 teaspoons of baking powder, 50 g of cocoa, 1/2 teaspoon of cinnamon and a hint of cardamom (it should really only be a hint, nothing more).
  8. In a mixing bowl, mix the softened butter, sugar, vanilla sugar and 2 pinches of salt with the mixer until frothy. Add the grumpy candy and the orange zest. Mix in the 4 eggs one after the other until you have a creamy, fluffy mixture.
  9. Now slowly stir in the flour mixture alternately with the cooled coffee mixture until the dough has a smooth consistency.
  10. Pour the batter into muffin molds and press 3 - 4 of the crushed chocolate chips into each muffin. Bake the muffins on the middle rack in the preheated oven at 180 ° C for about 30 minutes.
  11. Let the muffins cool and dust with powdered sugar.
  12. Tip:
  13. The total amount of sugar may seem high at first; if you take less, the muffins will lack sweetness because the aroma of the strong coffee takes away the sweetness of the dough. The grumpy candy has a slightly caramel note and provides a fine crunch.
  14. These muffins keep fresh for a good 2 days and the aromas of coffee, orange juice, rum, cinnamon and cardamom only develop really well the next day.
